Gardenia Mix
Gardenia mix is unsalted butter and honey in equal volumes, warmed together and seasoned with a little allspice dram, cinnamon syrup and vanilla syrup: Jeff Berry’s reconstruction of a Don the Beachcomber house mix. The butter means it contains milk. Made fresh each day and held at room temperature, soft enough to pour, it goes into the Pearl Diver at 22.5ml.
Quick Facts
Covered, at room temperature, through the session it was made for.
Contains: milk.
About Gardenia Mix
Flavour Profile
Primary Flavours
Tasting Notes
Rich honey and butter with cinnamon warmth, a little vanilla and a peppery allspice edge.
Butter and honey in equal measure, lightly spiced
The version Punch prints with Jeff Berry’s Pearl Diver takes a cup each of unsalted butter and orange blossom honey, an ounce of cinnamon syrup and half an ounce each of vanilla syrup and allspice dram, whisked in a pan over a medium heat until melted and smooth. Our house batch is half that, in metric: 115g of butter, 120ml of honey, 15ml of cinnamon syrup and 7.5ml each of vanilla syrup and dram, for about 260ml.
It is made on the day and kept soft
Berry’s note is plain: make the mix a short time before it is used and keep it at room temperature, since refrigerated it turns too sticky to blend. So it follows a same-day rule, like Donn’s Mix, rather than the week or month of a sugar syrup. Cover it, stir it before each measure and start fresh for the next session.

The Pearl Diver is built around it
Our Pearl Diver blends 22.5ml with gold Puerto Rican, Demerara and gold Jamaican rum, orange and lime juice and 5ml of falernum for fifteen seconds, then strains it over fresh crushed ice. Fast blending spreads the butter evenly while the citrus keeps it from tasting heavy; Punch calls the result an iced take on hot buttered rum.
Its three seasonings each have a page
The cinnamon syrup is the house 1:1 cassia recipe, the vanilla syrup is a 1:1 syrup steeped with a split pod, and the allspice dram is a bought liqueur at about 22%. Each keeps far longer than the mix, so they can be made or bought well ahead.
Using Gardenia Mix
Usage
Goes into the blender at 22.5ml for the Pearl Diver, with three rums, orange and lime juice and a teaspoon of falernum, then strained through a sieve. It needs the blender to break the butter through the drink, and it must be soft when it goes in.
House Recipe
Ingredients
- 115g unsalted butter, cubed (half a cup)
- 120ml orange blossom honey (half a cup)
- 15ml cinnamon syrup
- 7.5ml vanilla syrup
- 7.5ml allspice dram
Method
- Put everything in a small pan over a medium-low heat.
- Whisk until the butter has melted and the mix is smooth.
- Take it off the heat and keep it covered at room temperature until service.
- Stir before each measure.
Food safety
Contains milk, from the butter. It is kept out of the fridge so it stays pourable, so make only what one session needs and throw away what is left at the end of it.
Pro Tip
Warm a jug of gardenia mix in a bowl of hand-hot water if the room is cold. It should run off a spoon like thick honey; stiffer than that, it sets in flecks on the crushed ice.
Top Tips
- Use unsalted butter. Salted butter shows in a cold drink.
- Keep it at room temperature through service; from the fridge it is too stiff to blend.
- Stir it before each measure, since the butter and honey settle apart as it stands.
- Make only what the session needs and start a fresh batch next time.
Possible Substitutions
- Honey Syrup: dairy-free, with a dash of cinnamon syrup; the drink is thinner
Production Method
Unsalted butter and honey melted together with cinnamon syrup, vanilla syrup and allspice dram, after Jeff Berry’s published recipe.
History & Context
Don the Beachcomber’s bartenders worked from coded house mixes, and gardenia mix was one of them. Jeff Berry published his reconstruction in Sippin’ Safari in 2007; the batch given here follows the version Punch printed with his Pearl Diver from Latitude 29, his New Orleans bar.
