Reduction Doing the Flavouring

Apple cider syrup is reduction doing the work: 500ml of fresh cider or cloudy pressed juice simmered down by half, then set with 200g of demerara sugar so it pours like thin honey.

New England has made the unsweetened ancestor for centuries as boiled cider, a way of keeping the orchard through winter before refrigeration existed. The bar use is the same trick pointed at a glass rather than at a larder.

Concentration Is the Point

Fresh apple juice dilutes a drink. The syrup delivers the orchard note at 15ml a serve, with the juice’s acidity sharpened alongside its sugar as the water goes, and the demerara adding a dark caramel floor underneath.

That is why it cannot be substituted for apple juice by volume in either direction. Fifteen millilitres of this and 15ml of juice are not comparable ingredients, and swapping them changes the strength of the finished drink as much as its flavour.

Cool it, bottle it and refrigerate it, and it keeps for about two weeks. There is no heat treatment beyond the reduction itself, so it behaves like a fresh syrup rather than a shelf-stable one.

The demerara is doing more than sweetening. Reduced cider on its own is sharp and thin in the mouth, and the sugar gives it the body to pour and the dark caramel floor that makes it read as autumn rather than simply as apple.
