Cherry Tomato

The sweetest member of the salad, muddled into the glass. It gives sugar the big tomatoes lack, acid that stands in for part of the citrus, and the savoury depth that makes a tomato drink feel like food.

Tasting Notes

Concentrated tomato sweetness with real acidity and the savoury depth the fruit hides in plain sight: summer in miniature.

Storage & Handling

Room temperature, never the fridge: cold kills a tomato’s aromatics overnight.

Usage

Muddled ripe and thoroughly, until the fruit has surrendered completely, then shaken. Three make a Tomatini, and halved they garnish Bloody Mary builds and skewer onto anything in the savoury canon.

From the Fruit Bowl, Not the Carton

The cherry tomato entered the cocktail conversation properly in 2011, when Jimmy Barrat muddled it into the Tomatini at La Petite Maison Dubai and took the drink to the World Class final the following year.

The point it proved is that a savoury martini could be built from fresh fruit rather than from a juice carton, which is a different drink rather than a better-sourced version of the same one.

Three Registers at Once

Muddled ripe, the fruit gives sugar, acid and savour together. The sugar is what the big salad tomatoes lack, the acid stands in for part of the citrus, and the glutamates give the drink the quality that makes tomato drinks feel like food.

The shaker treats it as fruit and the palate reads it as lunch. That doubleness is the whole appeal, and it is why a Tomatini is difficult to place on a menu and easy to drink.

Never the Fridge

Cold destroys a tomato’s aromatics, and it does so overnight rather than gradually. Refrigerating them undoes the ripening that made them worth muddling.

Keep them on the counter and use them in season. In a drink built on three tomatoes there is nowhere for a hard winter fruit to hide, and it will muddle into acid water rather than sweet umami.

Muddle Without Mercy

This is the opposite instruction to most soft fruit. The Tomatini’s silk depends on the fruit surrendering completely before the ice goes in, so muddle until it is nearly liquid.

There are no seeds worth protecting and no skins that turn bitter under pressure, which is what separates it from berries. Halve them instead for garnish duty, so the cut face sits flat against the glass.

Season matters more here than technique. A ripe summer tomato muddles into sweet umami and a hard winter one into acid water, and no amount of pressing turns the second into the first, so the drink is worth saving for months when the fruit is worth using.

Top Tips

  • Ripeness is the recipe: a hard winter tomato muddles into acid water, a ripe summer one into sweet umami.
  • Muddle thoroughly: the Tomatini wants the fruit nearly liquified before the shake.
  • Halve them for garnish duty so the cut face sits against the glass.

Possible Substitutions

  • Tomato juice, in part: the Bloody Mary’s reading of the same fruit
  • A ripe regular tomato, chopped: more muddling, same direction

Common Questions

What drinks use cherry tomatoes?

The Tomatini is the showcase, muddling them into a savoury-sweet sour, and Bloody Mary builds skewer them as garnish. They are the fresh reading of the tomato in a drink, as against the juice a Mary is usually built on.

Why cherry rather than regular tomatoes?

Sugar and concentration. The small fruit ripens sweeter and muddles cleaner, giving the drink genuine fruit character rather than watery pulp. In a build resting on three tomatoes, that difference is most of the drink.

Should tomatoes be refrigerated?

No. The fridge destroys their aromatics overnight rather than gradually, undoing the ripening that made them worth using. Counter-ripened fruit in season is the whole difference in a drink built on three of them.

Can I make a Tomatini in winter?

You can, and it will not be the same drink. A hard out-of-season tomato muddles into acid water rather than sweet umami, and there is nowhere for it to hide in a build resting on three of them. It is worth waiting for the season.
