What It Does Behind a Bar
Three jobs, only one of which is on the box.
Whipped cream, obviously: 250ml of cream and one charger produces a firm, stable topping for an Irish Coffee that holds far better than anything whisked by hand.
Foams: a base of juice, syrup and a stabiliser of egg white, aquafaba or gelatine, charged and dispensed, gives a dense, even foam to float on a sour. It is more consistent than a dry shake and considerably faster across a service.
And rapid infusion, which is the one that changed things, because it collapses a week of steeping into a couple of minutes.
How Rapid Infusion Works
Put a spirit and a flavouring into the canister, such as peppercorns, herbs, tea or citrus peel, and charge it with N₂O. Under pressure, the gas is driven into the cells of the botanical.
Shake and leave it for a minute or two, then release the pressure sharply. The gas inside those cells expands violently and ruptures the cell walls, dumping their contents straight into the spirit.
It is the same mechanism as decompression in any pressurised system, applied deliberately. The result is a genuinely fast infusion, though it favours volatile aromatics over slow-extracting tannins. A rapid-infused Earl Grey gin tastes bright where a steeped one tastes deeper.
Chargers
Nitrous oxide, not CO₂. The two are not interchangeable: N₂O dissolves readily in fat, which is what makes cream whip, and it is close to flavourless. CO₂ dissolves in water and adds a distinct acidic tang, which is right for soda and wrong for cream.
Standard 8g chargers fit almost every whipper. One charge handles 250 to 500ml; larger canisters take two.
Check the thread type before buying. Most are the standard 8g screw fitting, but a few professional units use a different system, and a charger that does not seat properly vents its contents across the kitchen.
When It Will Not Dispense
Almost always a blockage, and almost always because something was not strained. Pulp, seeds, herb fragments and undissolved sugar all lodge in the narrow valve.
Strain every liquid through a fine mesh before it goes in, including anything with fresh juice. Fill to no more than two-thirds so there is headspace for the gas to occupy and for the contents to move when shaken.
Dispense inverted. Held upright, the head draws from the gas at the top rather than the liquid below it. And release all remaining pressure through the valve before unscrewing the head. A pressurised canister opened is a genuine hazard, not a mess.

If nothing dispenses, it is almost always an unstrained mix blocking the nozzle, not a faulty charger.
