Lemon-Lime Soda

Lemon-lime soda means a clear, sweet, sparkling soft drink tasting of lemon and lime, the style Sprite and 7Up belong to, with no alcohol. In Britain the same bottles are often simply called lemonade. Our Purple Rain uses 90ml of it to lengthen six spirits and liqueurs, where an iced-tea drink would use lemon juice, syrup and cola.

Sweet and clean with a bright lemon-lime sharpness over lively carbonation: uncomplicated citrus length that lifts a drink rather than steering it.

Sprite and 7Up set the style

Lemon-lime soda is carbonated water with lemon and lime flavouring, citric acid for bite and sugar or sweeteners, and it is usually colourless. Sprite and 7Up are the names most people know. Lime-led sodas sit at one end of the group, putting lime in front of lemon, and some sold as mixers add other citrus such as yuzu.

In Britain it is a near neighbour of lemonade

Many British drinkers call Sprite and 7Up lemonade, and a clear British lemonade does much the same job in a glass. The difference is the lime, which gives lemon-lime soda a sharper top note. Where a recipe needs still or cloudy lemonade, this is the wrong bottle.

Purple Rain is built on it

Our Purple Rain stacks five spirits and liqueurs at 15ml apiece, from vodka to triple sec, with a double measure of Chambord, then lengthens them with the soda where an iced-tea drink would use lemon juice, syrup and cola. Because the soda does the sweetening, the drink ends up softer than those, with raspberries to finish.

Cold, gentle and freshly opened

Bubbles survive better in cold liquid and are knocked out by stirring, so chill the bottle, load the glass with ice and run the soda in at the end. In our experience, once opened it fades over a day or two even with the cap back on, and as it loses its sparkle it tastes sweeter.

Usage

Added at the end, slowly, to a highball crammed with ice, to stretch a drink and leave its colour as it is. Our Purple Rain takes 90ml over six spirits and liqueurs; at that measure the soda brings the fizz and a large share of the sugar, so no syrup goes in.

Pro Tip

A drink built on lemon-lime soda and several spirits can taste only of sugar. A small squeeze of fresh lime over the top, after the soda, sharpens it without reworking the recipe.

Top Tips

Add it last, slowly, against the inside of the glass.
Use full sugar where the soda is the drink’s main sweetener.
Swap in clear British lemonade freely, adding fresh lime if it tastes too soft.
Buy cans or small bottles: a 330ml can holds enough for three Purple Rains.
