Two dashes shade a stirred agave drink and four flavour it. They belong in the Oaxaca Old Fashioned above all, and they travel well onto dark and spiced rum Old Fashioneds where cacao meets oak.

A Sauce, Reduced to Dashes

Mole bitters take the logic of Oaxacan mole sauce, where chocolate is deepened with chilli and spice rather than sweetened, and reduce it to dashes.

Against plain chocolate bitters the chilli shadow and the earth are the whole difference. Chocolate bitters stop at cacao; these add a low warmth that arrives at the back of the drink and makes agave spirits sit up.

The Oaxaca Old Fashioned

The Oaxaca Old Fashioned is the origin story and still the reference: tequila and mezcal split, agave syrup, mole bitters and an orange peel. It is an Old Fashioned that emigrated, and it made the bottle famous.
