The Sweetener Grenadine Replaced
Before grenadine conquered the back bar, raspberry syrup was the fruit sweetener of American drinking: nineteenth-century bar manuals reach for it constantly, in sours, fizzes, punches and daisies.
The Clover Club is its great survivor, a drink whose rose-pink colour and tart berry heart are the syrup with an egg-white halo around it. Reading an old manual with that in mind explains a good many recipes that otherwise look oddly sweet, because the syrup they assumed was sharper than the one a modern bar would reach for.
Cold, Not Cooked
The cold method makes the difference. Toss equal weights of raspberries and sugar, leave them overnight while the sugar draws the juice out of the fruit, then press through a sieve and bottle. No heat means nothing cooked or jammy: the syrup tastes like the berry, only louder.
The mechanism is osmosis rather than dissolving. Sugar against wet fruit pulls water out of the cells, and the juice that comes with it has never been heated, so the volatile compounds that make a raspberry smell like a raspberry are still in the bottle.
Frozen Fruit Is Better Here
Frozen raspberries work all year and press more readily than fresh ones, because freezing ruptures the cell walls and the fruit gives up its juice faster once thawed.
That makes this a year-round syrup rather than a summer one, and it means the expensive fresh punnet is the wrong purchase for the job. Save fresh berries for anything that will be looked at and use frozen for anything that will be crushed.
