Toddies
6 recipes
This Field Manual holds 6 recipes in the toddy family. A toddy is spirit, sugar and hot water, with lemon and spice as the usual additions. Jerry Thomas printed the sling in 1862 as the same drink with nutmeg grated on top, and the hot drinks here all grew from that frame.
Heat is the technique. Warm the glass or mug first, use water just off the boil and never boil anything with spirit in it. Butter, cream and coffee change the texture without changing the build: a Hot Buttered Rum and an Irish Coffee are both a sweetened spirit made long with something hot. The water also stretches the drink, so a toddy tastes milder than the spirit in it would suggest.
