Pornstar Martini

Wayfinder

The Pornstar Martini was created by Douglas Ankrah at the Townhouse bar in Knightsbridge, London, in 2002, and became one of the most successful cocktail creations of the twenty-first century within a decade of its introduction. Ankrah originally named it the Maverick Martini after a bar he had visited in South Africa, but changed the name to Pornstar Martini within months because he thought the new name better captured the drink's indulgent character. The name change is one of the more consequential branding decisions in modern cocktail history. The Pornstar Martini has consistently ranked among the top five most ordered cocktails in the United Kingdom for the last decade and has become a genuine modern classic that outlasted the era of vanilla vodka fashionability that produced it. The structure combines vanilla vodka, passion fruit puree, passion fruit liqueur, and fresh lime juice into a shaken sour that produces a tropical, fruit-forward drink with genuine complexity behind its accessible appearance. The signature serve pairs the finished cocktail with a shot of chilled Champagne served alongside it, creating a two-part drinking experience where the sipper alternates between the intense fruit character of the cocktail and the clean, dry effervescence of the Champagne. That structural pairing is as much a part of the Pornstar Martini's identity as any of its ingredients, and skipping the Champagne shot produces a drink that is technically the same cocktail but experientially incomplete. The passion fruit is the ingredient that most defines the drink and the element most worth investing in for a properly built version. Fresh passion fruit provides an aromatic complexity and a genuine tropical brightness that neither passion fruit puree nor passion fruit liqueur can fully replicate alone. The canonical build uses both puree and liqueur alongside half a fresh passion fruit as garnish, floated on the surface of the finished drink where its seeds and pulp contribute additional texture and aromatic depth as the drink is consumed.

Glassware: Nick & Nora Glass

Garnish: Half a fresh passion fruit

Ingredients

Serves
Vanilla Vodka

50ml

Stolichnaya Vanil is the original specification and the benchmark. Absolut Vanilia is a sound alternative. A neutral vodka with a few drops of pure vanilla extract is an acceptable substitute when vanilla vodka is unavailable.

Passion Fruit Liqueur

15ml

Passoã is the widely available benchmark. Its passion fruit character and 17% ABV contribution is calibrated for this drink specifically. Do not substitute with a generic tropical liqueur.

Passion Fruit Puree

25ml

Funkin or Boiron are reliable commercial products. The pulp of one fresh passion fruit strained through a coarse sieve is the premium option and produces a noticeably better result.

Fresh Lime Juice

15ml

Squeezed immediately before use. The acid backbone that stops the passion fruit and vanilla vodka from making the drink cloying and provides the contrast that keeps the tropical character bright.

Vanilla Sugar Syrup

10ml

One part white sugar dissolved in one part warm water with a vanilla pod split and steeped for two hours before straining. A neutral sugar syrup with a few drops of vanilla extract is an acceptable substitute.

Champagne

45ml

Chilled and served in a separate shot glass alongside the cocktail. A dry brut Champagne is the correct choice. Prosecco or Cava are acceptable substitutes that produce a slightly softer result.

Cubed Ice

1 scoop

For shaking only. The finished drink is served without ice in a chilled martini glass. Large clean cubes chill and dilute the drink at a predictable rate.

Fresh Passion Fruit

.5 piece

Cut in half and rested on the surface of the finished drink with the pulp and seeds facing upward. Provides visual signature and additional aromatic complexity as the drink is consumed.

Instructions

1

Squeeze lime juice immediately before building the drink.

2

Chill a martini glass and a small shot glass in the freezer or with ice water.

3

Add vanilla vodka, passion fruit liqueur, passion fruit puree, fresh lime juice, and vanilla sugar syrup to a shaker with a scoop of cubed ice.

4

Shake hard for 12 to 15 seconds.

5

Double strain into the chilled martini glass.

6

Cut a fresh passion fruit in half and rest one half on the surface of the drink with the pulp and seeds facing upward.

7

Pour chilled Champagne into the chilled shot glass and serve it alongside the martini glass.

8

Serve immediately.

Expert Tip

The Champagne shot is not optional if the Pornstar Martini is to be served correctly. The two-part experience of alternating between the fruit-forward cocktail and the dry, effervescent Champagne is what makes the drink work as designed. Serving the martini alone produces a drink that is technically the same recipe but experientially incomplete. The Champagne should be poured immediately before the drink reaches the table so it is at its coldest and most carbonated when the first sip is taken.

The Origin

Douglas Ankrah founded the Townhouse bar in Knightsbridge in 2002 and created the Pornstar Martini during the bar's opening months as a signature drink that would establish the venue's identity. Ankrah, born in Ghana and trained across some of London's most respected bars during the 1990s, developed the drink after a visit to South Africa where he encountered a bar called Mavericks. The original name for his creation was the Maverick Martini in acknowledgement of that visit, but he changed the name to Pornstar Martini within a few months because he thought the new name captured the drink's indulgent character more accurately.

The name change was one of the most consequential branding decisions in modern cocktail history. The Maverick Martini would almost certainly have remained a bar-specific signature at Townhouse rather than becoming the cultural phenomenon it became under its new name. The Pornstar Martini's name carries a specific kind of confidence and playfulness that suits the drink's tropical, fruit-forward character in a way that Maverick Martini simply did not. It also generated conversations at every table where it was ordered, which produced word-of-mouth marketing that no branding budget could replicate. By the mid-2000s the drink had spread beyond Townhouse to bars across London and the wider United Kingdom, and by the mid-2010s it was consistently among the top five most ordered cocktails in the country.

The Passion Fruit Foundation

Passion fruit is the ingredient that defines the Pornstar Martini and the element that most consequentially determines the quality of the finished drink. Ankrah's canonical build uses three separate passion fruit elements: passion fruit liqueur for structural sweetness and additional alcohol, passion fruit puree for body and concentrated fruit character, and half a fresh passion fruit as garnish for aromatic complexity and visual signature. The three elements work together to produce a passion fruit character that is more layered and more genuine than any single passion fruit ingredient could achieve alone.

The liqueur provides consistency across batches and contributes an alcohol integration that puree alone cannot match. Passoã, produced by Rémy Cointreau Group, is the widely available benchmark and the product Ankrah originally specified. It is 17% ABV and has a distinctly passion fruit character with additional tropical fruit notes and a slight vanilla underneath. The puree provides fruit body and concentrated flavour intensity that liqueur alone cannot match. Commercial purees from Funkin or Boiron are reliable and consistent. Fresh passion fruit strained through a coarse sieve produces the premium version at the cost of preparation time and consistency.

The Champagne Shot

The Champagne shot served alongside the finished cocktail is one of the most structurally important elements of the Pornstar Martini and one of the most commonly omitted in versions that fall short. Ankrah designed the drink as a two-part experience where the drinker alternates between the intense, fruit-forward character of the cocktail and the clean, dry effervescence of the Champagne. The contrast between the two produces a drinking experience that neither element could deliver alone, with the Champagne acting as a palate reset between sips of the cocktail and the cocktail providing fruit character that the Champagne alone does not carry.

The Champagne can be sipped alongside the cocktail or shot immediately after the cocktail is finished, depending on the drinker's preference. Both approaches are correct and both are consistent with how the drink has been served across its two-decade history. What is not correct is serving the Pornstar Martini without any Champagne alongside it, which produces a drink that is technically the same recipe but experientially incomplete. The Champagne shot is part of the drink, not an accompaniment to it.

The Vanilla Vodka Legacy

The Pornstar Martini was created during the peak popularity of vanilla-flavoured vodka in the early 2000s, a period when Stolichnaya Vanil and Absolut Vanilia dominated the flavoured vodka category and vanilla was appearing as a defining ingredient in signature cocktails across serious bars in London, New York, and beyond. The Pornstar Martini is one of the two most successful cocktails to emerge from that specific moment, alongside the Spicy Fifty documented elsewhere in the Field Manual, and both drinks demonstrate that vanilla vodka's era of fashionability produced genuinely durable modern classics that have outlasted the era itself.

Vanilla vodka is now considerably less fashionable than it was in 2002, with contemporary bartenders more commonly favouring pure vanilla infusions of neutral vodka or vanilla syrup added to standard vodka. Both approaches produce acceptable Pornstar Martinis, but the original recipe calls for vanilla vodka specifically because the integrated vanilla in the commercial product produces a more coherent flavour profile than vanilla added separately at the point of service. Use Stoli Vanil or Absolut Vanilia if available. Use the extract or infusion methods only as substitutes.

The Cultural Impact

The Pornstar Martini's cultural impact extends beyond its status as a widely ordered cocktail. It has become one of the drinks most associated with the modern British bar scene and one of the most recognisable signature cocktails to emerge from any bartender working in the twenty-first century. Douglas Ankrah continued working as a bartender and consultant until his death in 2020, and his obituaries consistently cited the Pornstar Martini as his most significant contribution to the industry. The drink has been documented in every major cocktail book of the last decade, has appeared on menus in bars across every continent, and has generated enough imitation and variation to constitute a genuine sub-genre of passion fruit and Champagne pairing cocktails.

How to Serve It

Shaken hard and double strained into a chilled martini glass, with a half passion fruit floated on the surface and a chilled shot of Champagne served alongside in a separate glass. Serve immediately and serve it cold. The Pornstar Martini is a celebratory drink by character and context, suited to occasions where its indulgent presentation and the two-part experience of the cocktail and Champagne pairing suit the room. Build it with quality vanilla vodka, real passion fruit in both liqueur and fresh form, and Champagne poured at the last possible moment. Ankrah built the drink to be enjoyed, and enjoyment is easier when the drink is built as he intended.
